MANGO CHUTNEY(From Chef Kevin Enright)

1/2 medium onion, diced
1/2 medium green pepper, diced
1 t. olive oil
2 T. sugar
2 T. vinegar
1 T. Tabasco sauce
1 T. dark rum
1/2 t. cinnamon, ground
3 medium mango, large dice

1. Saute the onion and pepper 2-3 minutes, until just soft 2. Add the remaining ingredients and cook for 5 minutes. 3. Fold in the mango and refrigerate for 2 hours to over night. 4. Bring to room temperature before serving with grilled fish, pork or chicken.
