GRILLED MARINATED HALIBUT (From Chef Kevin Enright)
2 7/8 t. garlic, chopped
1/2 c. olive oil
1 1/2 t. dried basil
1 3/4 t. salt
1 1/2 t. black pepper
1 1/2 T. lemon juice
1 1/2 T. parsley, chopped
6 (3 oz. ea.) halibut steaks (boneless)
Mix all the ingredients in a stainless steel pan and let sit over night. Put the halibut steaks in the marinade and marinate over night. When ready to cook drain the marinade from the fish. Heat the grill until very hot. Wipe the grates with oil. Cook the steaks 3-4 minutes on each side. Maximum internal temperature 140°, or until firm to the touch. Serve with mango chutney.
