QUICK AND EASY SALMON PATTIES (Lee Lindamood's)
1 can (14 3/4 oz.) salmon, drained
1/3 c. finely chopped onion
1 t. minced celery
1/4-1/2 t. dill weed
1 egg, beaten
5 saltine crackers, crushed
1/2 t. Worcestershire sauce
1/4 t. salt
1/8 t. pepper
1/2 t. Old Bay seasoning
2 t. butter
fresh lemon juice
Mix all ingredients, except the butter and the lemon, in a bowl. Over medium heat, melt butter. Shape the mixture into 6 patties and fry, in the butter, 3-4 minutes on each side til heated through. Serve with a squeeze of lemon over each patty.
