HORSERADISH-BURGER (From Chef Dave, Holiday Market, Royal Oak, Mi.)

2 lb. ground beef, chuck or round
1/4 c. horseradish
1/2 bunch fresh chives, minced
1 T. Holiday's steak and chop seasoning (or your favorite meat seasoning)
1 jalapeno pepper, chopped fine
salt and pepper to taste
8 slices Havarti cheese

Combine all ingredients except cheese and form into 8 burgers. Cook to desired doneness. Place on bun and top with cheese, lettuce, tomato and onion if desired.
