MANDARIN ORANGE SALAD (Beth's)
1/4 c. olive oil
4 t. balsamic vinegar
1 1/2 t. Dijon mustard
1/4 t. salt
1/4 t. pepper
1/2 lb. baby leaf spinach or mixed greens
1 can (11 oz.) chilled Mandarin oranges, drained
1/2 c. sliced ripe olives
1/2 c. sliced red or Vidalia onion
1/4 c. crumbled Feta cheese
Combine first 5 ingredients in a small bowl and stir til blended. Combine next 4 items in a bowl and toss with dressing. Top with Feta cheese.
