Last month we lost one of our most beloved "Neighbors" - Helen Garvock. She was a wonderful cook who shared many of her recipes with us through the years. She was also a wonderful human being who did more good things than most of us could even imagine. Rather than mourn her loss, let us celebrate her life. Our thoughts go out to Malcom and the family. One of her most loved recipes was her raspberry pie. It's very simple, but Helen had that "secret ingredient" - a love for everything she did. Everyone said that no one could make this recipe like she did. She will be missed.
Bob & Rob.

RASPBERRY PIE (Helen Garvock's)

6 c. raspberries (out of your garden is best)
2 c. water
2/3 c. sugar
3 T. cornstarch
1 (9 inch) baked pie shell
1 c. whipped cream

Mash berries and strain seeds out through a sieve. Place berries, water, sugar and cornstarch in a saucepan and cook, stirring constantly, until thick. Cool. Pour into pie shell. Chill until set. Spread whipped cream on top before serving.
