SWEET POTATOES WITH MARSHMALLOW CLOUDS

6 large sweet potatoes, peeled and cut into cubes
1/4 c. unsalted butter
3/4 c. light cream
1/2 c. dark brown sugar, packed
1/2 t. cinnamon
1 t. vanilla
12 large marshmallows

Boil sweet potatoes in water to cover for 25 minutes or til tender but not mushy. Preheat oven 350°. Grease a (9x13 inch) glass baking dish. Drain potatoes. Add butter, cream, brown sugar, cinnamon and vanilla. Pour to the baking dish. Cover and bake 35-40 minutes. Uncover and place marshmallows on top. Return to oven, uncovered and bake for 5-8 minutes.
