CHILLED RED RASPBERRY SOUP FROM THE GRAND HOTEL MACKINAC, Mi. (Chef Hans')
1/3 c. lemon juice
1/3 c. powdered sugar
1/3 c. honey
1/3 c. packed light brown sugar
1 qt. fresh red raspberries
Blend til smooth. Transfer to a medium bowl and fold in 1 pt. heavy cream, whipped stiff.
COLD MELON SOUP FROM THE GRAND HOTEL:
Substitute 2 c. peeled cantaloupe cut into 1 inch cubes and 2 c. watermelon cut into 1 inch cubes for the red raspberries.
