CALDER'S EGG NOG (From Calder Brothers Dairy, Lincoln Park, Mi.)

6 egg yolks
2 1/4 c. milk
1 c. nonfat dry milk powder
3/4 c. sugar
2 t. unflavored gelatin
1 c. heavy cream
1 t. vanilla
1 1/2 t. nutmeg
2 T. Jamaican rum or 1/2 t. rum flavoring

Pour milk into blender, add milk powder and blend for about 30 seconds. Add yolks and blend again. In a small bowl, combine sugar and gelatin and add to mixture in blender and blend a few more seconds. Pour in heavy cream and blend again. Transfer to a sauce pan and heat on medium to 160°. Refrigerate 12 hours. Add vanilla, nutmeg and rum. Stir well and serve.
