PEANUT BUTTER SANDWICH COOKIES LIKE THE GIRL SCOUTS "SAVANNAH'S" (Gloria Pitzer)
Beat 2 c. Bisquick, 2 eggs, 2/3 c. packed light brown sugar, 5 T. peanut butter and 1 T. vanilla together well. Remove beaters and shape dough into 1 inch balls. Place 2 inches apart on an ungreased baking sheet. Flatten each cookie a little bit with the bottom of a glass which is greased and dipped into sugar. Bake 365° about 6 minutes or til set. Transfer to paper towels. When cool and crisp fill 2 cookies with filling below.
SAVANNAH COOKIE FILLING:
In small saucepan bring to a boil 1/3 c. milk, 1/3 c. dark corn syrup and 1/2 c. packed light brown sugar. Reduce to a simmer and cook, stirring constantly, for 5 minutes. Remove from heat and stir in 2/3 c. peanut butter and 1 c. powdered sugar; beat a few minutes on high speed. Spread filling between 2 cookies, using about 1/2 t. filling each time. Apply filling to the flat sides of the cookies when putting them together. Press together gently to let filling come right to edges of the cookies.
