
You finished that turkey dinner and that huge turkey is going to take up way too much space in the refrigerator. What do you do, make leftover turkey soup!
TURKEY SOUP USING LEFTOVER TURKEY
Place turkey carcass in a soup pot and cover with water. Add discarded pieces of carrot and onion (optional). Simmer for 1-2 hours (add more water if needed) skimming the scum that rises to the top. Strain liquid. Add any turkey drippings (remove the fat from these) and stir to blend. Add wide noodles and leftover turkey meat (you may add chopped onions, celery and carrots too for color) and heat through.
Note: you can use this recipe for leftover chicken as well.
