(Aug. 2000, Issue #202, p.4)
Helen says the cabbage should be shredded about the thickness of a dime. Then layer the cabbage and a little of the salt and mash it down until the juice covers the cabbage. Repeat. You can use a potato masher, wooden spoon or your hand to mash the cabbage. When finished the juice must cover the cabbage. Then you weight it down to keep the cabbage under the brine and cover it all with a clean cloth. Formation of bubbles indicates fermentation is taking place which is what you want. It takes from 4-6 weeks to complete. When completed, kraut can be frozen or if you prefer, canned by processing pints 15 minutes or quarts 20 min. in hot water bath.
